This pasta dish is made with green prawns drenched in onion and garlic, and mixed with a tomato base served on a bed of spinach. It’s great hangover food and it’s not too heavy. I learnt it in Drama class: Improvization.

This is an adaption of my friend Skye’s classic recipe, which she brought back from a trip to Italy. I have been fortunate to eat this many times at her home and I have never tasted a better pesto anywhere. Pesto sauce can be used in so many ways, not just over pasta. You’ll never go hungry if there’s pesto in the fridge!

She cooked with love, she cooked with what she had available in communist times and she always cooked plenty. 

Here is my favorite recipe of hers. I can imagine the smell of new season tomatoes boiling gently in butter driving my Dad wild with hunger as a kid. 

So I always make this soup when tomatoes are in full seasonal swing, when they are big, ripe and cheap.

Get into dark greens: broccoli, spinach, watercress and sprouts. These contain incredible amounts of vitamins and are easily absorbed by the body in juice from. Drink your greens and you’ll feel the energy lift!
