Neeta’s Rice Palau

Here is the lovely Neeta’s delicious recipe for Rice Palau. Best eaten immediately and often for best effect. Enjoy!
Ingredients
- 1 spanish onion sliced
- 4 teaspoons olive oil
- 1 carrot, grated
- 1 head broccoli, chopped
- 1 cup (6 oz) green peas
- Salt, to taste
- 2 teaspoons of cumin seeds
- 2 teaspoons tomato paste
- 5 cups (40 fl oz) water
- 2 cups (14 oz) rice, soaked for half an hour
How to make it
- In a large pan, on medium heat, fry the onion in olive oil until pink.
- Add all the prepared vegetables to the pan.
- Add salt, cumin seeds and tomato paste.
- Stir for a few minutes and then cover for about 1 minute.
- Lower heat and cover pan to allow to simmer.
- When the vegetables are half cooked, put the water in a saucepan and bring to the boil.
- Once the water is boiling add the rice.
- Once the water is boiling add the rice, cover and leave on low heat for 2 minutes.
- After 2 minutes stir it again. Test the rice with your fingers to see if it has softened.
- Turn off the flame but keep it covered – the rice is then ready!
Combine the rice and vegetables and mix well. Serve immediately. This recipe serves between 2 – 4 people.
