Neeta’s Rice Palau

Here is the lovely Neeta’s delicious recipe for Rice Palau. Best eaten immediately and often for best effect. Enjoy!

Ingredients

  • 1 spanish onion sliced
  • 4 teaspoons olive oil
  • 1 carrot, grated
  • 1 head broccoli, chopped
  • 1 cup (6 oz) green peas
  • Salt, to taste
  • 2 teaspoons of cumin seeds
  • 2 teaspoons tomato paste
  • 5 cups (40 fl oz) water
  • 2 cups (14 oz) rice, soaked for half an hour

How to make it

  1. In a large pan, on medium heat, fry the onion in olive oil until pink.
  2. Add all the prepared vegetables to the pan.
  3. Add salt, cumin seeds and tomato paste.
  4. Stir for a few minutes and then cover for about 1 minute.
  5. Lower heat and cover pan to allow to simmer.
  6. When the vegetables are half cooked, put the water in a saucepan and bring to the boil.
  7. Once the water is boiling add the rice.
  8. Once the water is boiling add the rice, cover and leave  on low heat for 2 minutes.
  9. After 2 minutes stir it again. Test the rice with your fingers to see if it has softened.
  10. Turn off the flame but keep it covered – the rice is then ready!

Combine the rice and vegetables and mix well. Serve immediately. This recipe serves between 2 – 4 people.
